This recipe comes special thanks to some friends of my folks. They met in Mississippi when I was in high school with their son. This is a perfect snack, freezes well, and goes well as part of a meal, too. The original recipe uses Vege-burger, but I was out of it. Redi-burger is an acceptable substitute.
Recipe for Puff Pastry Bites
- Pepperidge Farm Puff Pastry Sheets
- Can of Worthington Vege-burger, crumbled
- Small to medium onion, finely diced
- 1T Onion powder
- 1T Garlic Powder
- 1t Dehydrated Crushed Basil
- Pepper if desired.
- 1/2 cup Salsa
- 1/2 cup Sour Cream
Preheat oven according to package directions. Open packages of Puff Pastry Sheets and defrost. Breaking the sheets where they are folded and spreading them on a cutting board makes them defrost faster. Meanwhile, mix the crumbled Vege-burger, onions, and seasoning. When Puff Pastries have defrosted, spoon Vege-burger mixture into the center of the sheets and spread vertically. Fold the sheet vertically over the mixture. Where sides meet, press with the tines of a fork to hold the sides together. Cut the log horizontally into bite-sized pieces and place them lighlty separated on an ungreased baking sheet. Bake according to package directions. Meanwhile, mix salsa and sour cream for the dip.
The picture shows the amount yielded using two-thirds of a pastry sheet. Six sheets come in each box.
This is generally only for special occasions at my house because the Puff Pastries are so expensive. However, we live near a Pepperidge Farm Thrift Store, which makes it more affordable.
