Just in time for a Labor Day feast, we acquired some fresh corn on the cob and a recipe from foodnetwork.tv for lime cilantro butter to spread over the corn before wrapping in foil and roasting. The product was wonderful. I think that result was fabulous, even if not exceptionally healthy with the large amount of butter.
Perhaps when using unsalted butter like I do, the added salt content should be increased. Sadly, I only had dehydrated cilantro and can imagine the fresh herbs to be even more powerful. I definitely recommend the idea because it's so much better than a plain butter-and-salt combination. Also, it always makes me feel like I slaved all day when I can bring something slightly unusual or different to the table.
As for the "learn something new every day" idea, I recommend putting a cookie tray under the corn when it's laid on the rack because the foil just cannot seem to keep the butter from leaking out no matter how many times it is wrapped around the corn!
