Menu for June 8-12, 2009
Recap: Last week whizzed by. Paul surprised me with a weekend at Cocoa Beach, which was so nice because we had no particular agenda. We could just walk along the sand and the sea for as far as we wanted to go. Sadly, however, the Hilton didn't have free internet, and I have a hard time paying for it; so, we survived nearly 48 hours without reviewing our websites and emails.
That being said, I struggled to replay last week's actual menu in my mind in comparison to the planned menu. I remember having corn-on-the-cob last Sunday night, but can't for the life of me remember what I served with it. Also, we had a nice beautiful tomato to eat up Thursday night as I knew I would be acquiring fresher in-season produce on Friday. And Friday afternoon we were so anxious to leave for the beach, we just had leftover baked beans (maybe that's what I had with the corn?) some MorningStar Farms Buffalo Wings that I picked up for $0.84 a box at Target by stacking a Target coupon and a manufacturer's coupon.
I'm afraid the rice-duplication-experiment must be put on the back burner this week. There have been some changes at work due to issues with the radiopharmacy, which will no doubt leave me completely exhausted at the end of what will likely be at least 10-hour-days. So, I am thinking up fast, no-brainer meals that I will hardly have to think about.
Menu for Week of June 8
Firstly, I intend to set black-eyed peas to soak before I leave for work tomorrow morning. Whichever one of us gets home first gets to cook them. They will then be lunch for Paul in the next few days or a meal for us one night when it will be all I can do to turn on the microwave. The hardest work I will have to do for this dish is to serve it with cornbread as that is how Paul likes it.
Other meals will likely be:
- Roasted Asparagus (right about peak season), veggie-meat, and cornbread (likely two batches to save time later).
- Breakfast for Dinner-Oatmeal Pancakes (The mix cost me $0.69 at Target.) and fresh fruit.
- Burritos with caramelized onions, beans and Muir Glen Fire-roasted Organic Tomatoes, and brown rice.
- Egg fu Yong with MorningStar Farms Asian Patties.
- And, as always (at least through the summer), there will be "corn and. . ." on the menu.
