Hanging Tomato Stand

Just in case you've missed me the last couple of days, I have an explanation. Especially for my AWOL Sunday. The original tomato plant stand we had did not work for so many reasons. So, we rigged this tripod/teepee. It isn't quite as elegant as we had hoped for, but it likely will be successful in helping us fill the vacant gap of tomatoes in our household from the poor weather in Florida. Thank you, Paul, for spending your "lazy Sunday afternoon" putting it together. And thank you, Peter, for the engineering advice.

And now onto our Menu Plan for the week. We're starting what I hope will be a new tradition at our house inspired by Aimee's Vegetarian Recipes. They have a "Dinner Club."

Also, this weekend I came to a shocking realization. I learned that even though I used to not have anything at all in my head for weekend meals, but could put something nice together pretty easily, I don't seem to be able to find the brain power for that these days. I also learned that if I don't have a lunch planned for myself, I'll end up eating something quick, but not healthy--like the cheese quesadilla I had on Thursday. I know I can't live like that. So, I'll start adding lunch plans in for Paul and myself, which will hopefully keep our budget down and help me appear a bit more sane. Please let me know if you have any advice. I'm more than happy to have it.

Lunch Plans

  • I have two restaurants to review for lunch two days this week. Also, I know Paul likes to eat at Lakeside Cafe (which isn't so expensive with his employee discount), so I've planned for him to get to eat there two days this week.
  • One day we'll both get burritos to finish out the beans in the freezer so next week I can make more!
  • One day we'll both get the leftovers from Wednesday night's dinner.
  • Lastly, I'll get the eggroll leftovers from last week and Paul will get the leftovers from this week's dinners.

Dinner Plans

I haven't thought much about the weekend, yet. That's so far away! I'll consult with my mother about Saturday's meals as we normally eat them together. Sunday, we often eat just two meals (breakfast and late lunch), or a big meal for lunch and fruit for dinner. The big meal will be pasta with spicy tomato sauce.
