Lisa, a great inspiration to me as a chef and also to my aunt who has just been diagnosed with a wheat allergy, is here from Washington with her family. Naturally, cooking for her and two young-ens may be a challenge for me, but I'm totally up for it and am so excited that Brent, Lisa, Kyle, and Elena will be visiting us for the week! I wrote up a very detailed menu for my own benefit to make sure I don't forget anything in the hustle and bustle of our busy schedule.
Gluten-free Breakfasts
- Monday-Cereal for Paul and I. We're off, and we'll collect the Hardinges at the airport and head straight for the beach.
- Tuesday-I'm off again. Will try my hand at gluten-free pancakes or French Toast and egg scramble.
- Wednesday and Thursday-Cereal, Fruit, and Toast
- Friday-A grand breakfast mixture of all of the above for preparation for the return flight.
Gluten-free Lunches
- Monday-Picnic Lunch: PBJs (gluten-free bread for Lisa), Food Should Taste Good Multigrain Chips, Hummus, veggie sticks, Apples, homemade trail mix, gluten-free cookies if I can find a great mix
- Tuesday-Sandwiches and Smoothies
- Wednesday-Leftovers (See below): Quinoa Pancakes, Beans, Corn on the Cob
- Thursday-Leftovers (See below): Falafel pitas, quinoa salad, rice and bean leftovers
- Friday-Lunch for the plane. See Monday.
Of course, all this is dependent on what other friends they'll be visiting and whether or not they'll be spending the day at a theme park.
Gluten-free Dinners
- Monday-Dining out on the way home from the beach. Olive Garden (Gluten-free Pizza) or Taco Bell (Tostada)
- Tuesday-Quinoa potato pancakes (which Lisa got the recipe for, but never had time to make), corn on the cob, baked beans
- Wednesday-Falafel pitas, lettuce, tomato, onion, quinoa salad (parsley, onion, cucumber, tahini dressing--check in later for recipe) beside rice and beans since the falafel is new to them.
- Thursday-Vegetable Kababs over brown rice (zucchini, sweet potato, onion, bell pepper, olive, broccoli, etc.)
- Friday-Leftovers or cereal
I'm pretty sure I'll be able to concoct mixtures of leftovers throughout the weekend. I don't complain about such things. Cooking once to last a while is very good for the time- and the money-budget.
