Thanksgiving Menu Plan 2010

What does this picture have to do with Thanksgiving? Well, this light dinner we ate a few weeks back reminds me that that's about what I normally eat. I don't have to have an overflowing plate Thanksgiving Day just because it's a holiday. I hope I remember that next week. . .

OK, the moment many of us (including myself) have been waiting for: Our Menu Plan for Turkey-Day 2010.

Half the family will start the day at the Turkey Trot. My parents will not be able to participate as they will be sitting with my 90-year-old grandmother with knee problems. But since we were spending the greater part of the morning in the great outdoors, I wanted to plan a simple menu that would keep up the food-meaning of the holiday without causing us to spend lots of time in the kitchen and without undoing all the calorie-burning activities of the morning.

Thanksgiving Dinner

  • Sweet potatoes-cooked whole in the slow cooker for two hours. Comes out perfect. This will also be what Nora eats to celebrate the holiday.
  • My mom's cornbread dressing with vegetarian chicken pieces
  • A basic roux-gravy to go on the dressing
  • Sliced vegetarian turkey heats in the pan after the gravy is made
  • Fresh green beans (Still working on this recipe.)
  • Homemade wheat rolls
  • Cranberries have two places. 1) A cranberry apple butter from Trader Joe's to go on the rolls. Might taste good on the dressing, too. 2) Cranberry Apple crumble (Less fat from a pie crust. Healthy fresh fruit. Only one dessert option. All good for the waist-line.

Stay tuned for the recipe for the rest of Thanksgiving week. I've decided to serve things like mashed potatoes and pumpkins another time so that we still eat them. Just not all in one day or in one sitting!
