Menu Plan Monday -Back to Work


Judging by the fact that I'm posting this so late, you've probably already figured out it was a long day. Also, if you read yesterday's post about needing breakfasts, too, you'd expect this post to be late.

Believe it or not, there were some great deals on produce last week. I bought what I wanted and worked the entire week's menu off of that, not expecting to grocery shop at all. I hope that really works out. I actually made the menu up leaving extra ideas to cover the weekend. Plus, my mom and dad brought over some leftover Caprese salad from a potluck they'd had.

Lunch Ideas

  • Crackers, carrots, hummus, cheese, muffin
  • salad, PBJ, muffin
  • Leftovers
  • Veggie-turkey sandwiches

Dinner Ideas

  • Monday-Serving completely dinner at church for 20-ish. Left Paul some with leftovers at home.
  • Chinese (Bok Choy, cabbage, egg, veggie meat)
  • Baked potatoes
  • Egg Drop Soup
  • Baked Potatoes
  • One Dinner out with friends. Fun!

I want to share that one of the blogs I follow had a great video last week about menu planning. I agree that you don't have to do the meals in order and that it's purpose is to make sure you have all the ingredients to put something on the table. My main goal is to simplify my life. It keeps food from going bad. It keeps my cupboards from being crammed to the point where I can't find what foods are really in there. And it helps me keep the meals balanced. I'm grateful that she started me on the subject of planning. And even when I don't type it out for you to see, there's likely a paper list floating around my kitchen with the details.
