Menu Plan Monday-All Day in the Kitchen!

Two weeks ago, we were away for a conference for Paul's work and visiting old (meaning known since high school) friends. Last week, I didn't get around to a meal plan. It was a rough week. I literally had no idea until the end of the day what I might prepare for dinner. Poor choice. Please learn from my mistakes. Make a menu plan.

I was so lost last week that I've actually prepared a menu for the next two weeks. But I won't bore you with the details that far in advance. Let's just stick to this week. Actually, first, let's talk about what I did today. I spent the whole day in the kitchen minus a couple hours to spend time with Nora and fetch my immersion blender from my friend three houses down. I hasten to add that this includes cleaning up the kitchen twice, which is significantly less fun, and mopping up because Nora had just a little too much fun with her food at lunch.

Monday's Day in the Kitchen Accomplishments

  • Strawberry Cream Popsicles (Recipe soon!)
  • Wonton Wrappers
  • Cauliflower Potato Dumplings (Recipe coming soon!)-What I made using the Wonton Wrappers
  • A smoothie for my breakfast in the AM
  • Dilled Havarti crackers (Far superior when cut into rabbit shapes. Nora couldn't get enough of them.) This time I added an additional 1/2 teaspoon paprika
  • Falafel (Recipe from Parent's Magazine) for 20, which I froze and hope to reheat on my griddle.
  • Cut up Cauliflower for later on in the week.
  • Loaf of Bread

Lunch Plans

  • Paul has lunch at work three days this week. (Love graduation time!)
  • I get all the leftovers!
  • Today: Spinach Quesadilla-Nora can eat half on her own.
  • Oranges, celery sticks, and trail mix

Dinner Plans

  • Paul gets dinner one night at the office and is running a race another night. I was too late to sign up for the race. :(
  • Salad and Sandwich when it's just me and the kid
  • Monday-Cauliflower Potato Dumplings, rice and edamame
  • Curried Cauliflower
  • Sauteed Spinach over Polenta

We'd love to have a friend from high school over with her family on Saturday. (Normally, we're dining with my parents.) I'm waffling between a few dishes.

So, that's my busy and exciting beginning to the week. I'm quite excited about the dishes we're trying. My taste buds are feeling giddy. What are your taste buds going to savor this week?
