Start the gravy first. Then, start cooking the squash (if microwaving). In a large skillet, Saute onions and garlic in olive oil. When onions are translucent, add edamame. Cook through. Add cooked spaghetti squash to vegetables. Pour gravy over the vegetables and allow flavors to marinate (3-5 minutes.) Serve vegetables topped with toasted sesame seeds.

Recipe from my mother. Have no idea where she got it, but she's made it all my life.
1/8 C soy sauce
1 T cornstarch
1 1/4 C water
In a mall saucepan, combine all ingredients. Cook on low-medium, stirring frequently, until clear.
Last week was a surprising challenge due to the fact that I had a slight relapse and wasn't feeling up to playing around in the kitchen as much as I had desired. Paul had pity on me more than one night by eating bagels with carrot sticks or other veggies a couple nights and taking me out to eat one night. That being said, I have a much fancier menu planned this week just to pay him back for my slacking week and to allow my creativity to be uncanned for a while.
Last week we had fabulous potato quinoa pancakes from Coming Home to Cook; so I figured a sweet potato gratin from Moosewood Simple Suppers cookbook would go over well, too. Well, it didn't.
We dined at Infusion Tea tonight even though it wasn't as early as I had planned. Even at 5 and 6 o'clock, there was a nice stream of diners at the restaurant, which is always encouraging. Generally a full restaurant suggests a good restaurant.
