It's been so long since I posted a menu plan--not because I didn't have one, but because there were other things to talk about. Plus, there were the holidays when you generally just think of leftovers for every meal.
Getting off to a great start with my New Year's Kitchen Resolutions, I start this week with recipes from a cookbook I have never used, but have owned for about 2 years. On Thursday, I read through The Vegetable Dishes I Can't Live Without and made a list of the ones I wanted to try. I came home from the grocery store with two of the cheapest vegetables I could fine, and I intend to use them for meals during the week.
- Hommus, carrot sticks, Triscuits, celery with peanut butter, Apple or Pumpkin Muffin, Apple or Orange x 1 or 2
- Leftovers x2 or 3
- Veggie turkey sandwiches
